I love when things come together at just the right time. I found a really nice bundt pan in my cupboard, which I’ve had for a long time. I couldn’t remember if I’d ever even used it before though. Then, I was clicking around on Pinterest and I happened to come across this recipe for Strawberry Yogurt Cake. Perfect!
On the other hand, I don’t like when I follow a recipe and it doesn’t turn out well. What a pain! Especially when it involves special ingredients that I don’t keep on hand, like greek yogurt or loads of strawberries. The first time I attempted to make this cake, I followed the directions, used plain yogurt, and waited half an hour for cooling, then turned the cake out of the pan. Fail. The top of the cake, where the strawberries settled, didn’t come out of the pan. However, the cake was delicious!
So, I did something I rarely do. I tried again, a couple days later. The issues weren’t really with the recipe, they were more to do with my interpretation of the recipe. This time I used greek yogurt (less liquid-y), I used slightly fewer strawberries, and I baked the cake about 10 minutes extra (because it needed it, that wasn’t planned). Then I let it cool completely in the pan before trying to turn it out. Success!! The cake came out perfectly, the texture was just right and the flavor was still excellent! Even better still, my desire to make the cake a success, but not to eat a second cake all by myself, led to Timmy, Jane and I going to his Nanny and Pop’s for dinner. So happy we could share the evening, and the tasty strawberry cake, with family!

I am coping pretty well with the amount of sleep I get each night. Better than I thought I would, considering I’m a girl who likes a nice 9-10 hour snooze. Now we’re looking at 6 hours on a really good night. In fact, I’ve even started staying up after the 4:30 – 5:00am feeding to go for a run before Timmy heads to work. Tangent – running at 5:00am is the best. There is no one else out there, it’s nice and cool, you hardly have to stop at cross streets. It’s just me and the bunnies hopping along. And by running, I mean running and walking intervals, because I completely fell out of shape during operation Jane… End tangent.
While I do feel good most days, some times I just need a pick me up. And if I’m going to drink a little extra coffee, I might as well make it extra worth it, right? Enter Hawaiian Iced Coffee. I am a big fan of coconut, and coffee, and brown sugar, so how could I go wrong with this recipe? It took 5 minutes to make, minus brewing time (I just made a whole pot in the morning and used what was left for this). It’s delicious, perfect on a hot afternoon.
Every year Timmy’s whole family packs it up and heads to the shore for a week. We rent a house (or 2) and spend hours on the beach, followed by hours of games and story telling. We always have a great time, and this year was no different. Actually, it was very different because Jane was there. We spent a lot less time on the beach, and a lot more time taking walks on the boardwalk. Timmy didn’t even finish one book, when his average is at least 2. But Jane got to play in the sand, and dip her toes in the ocean for the first time, which is so much more fun.
We had been looking forward to this trip for quite a while. A whole week together as a family! Timmy didn’t have to go to work, or even think about it. It was great! We even got to do a few things together while some one else looked after Jane. I admit that the Monday after was tough. Timmy had to go back to work, I no longer had hordes of people anxiously waiting to hold/entertain Jane while I took a shower or ate dinner. Boy do I appreciate the weekends we get together!
Gee, who knew having a baby would take up so much of my time? Oh, I did… Here is a little peek at what we’ve been up to:
Jane has been growing like crazy! Today she had her 2 month check up and she is 23″ long and weighs 10 lbs 3 ozs! My arm muscles can hardly keep up.
We celebrated Timmy’s first Fathers’ Day. What a luck girl Jane is to have such a wonderful daddy!
I’m working on a couple more posts, so hopefully I’ll be able to post a couple times each week. My goal is not to make every post all about Jane, but look at her cuteness. Not to mention she is pretty much all I have time, or energy, to work on some days… Wow, time goes by so quickly!
