Peppermint Brownie Bites.

This is another recipe from that Holiday Cheer magazine, and these are tasty! Nothing says holiday baking like peppermint. And nothing goes better with peppermint than chocolate! I also love that these cookies can be scarfed in 2 bites (or 1 if you’re Timmy). I hope you enjoy these yummy treats! They sure didn’t last long at our house.

Cookie Ingredients:
2/3 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking powder
pinch of salt
3 tbsp butter or margarine, melted and cooled
2 tbsp honey
1 tsp pure vanilla extract
1 large egg white

Peppermint Topping Ingredients:
1 cup confectioner’s sugar
1 tbsp milk
1 tbsp butter or margarine, softened
1/2 tsp peppermint extract
2 oz. white chocolate, melted and cooled
2 oz, peppermint candy, broken into chunks

Directions:
1 – Preheat oven to 350°F. Grease large cookie sheet. In a large bowl, combine flour, cocoa, baking powder and salt. In a medium bowl, whisk sugar, butter, honey, vanilla and egg white until blended. Stir sugar mixture into flour mixture; then, with your hand, press the dough until just blended.

2 – With greased hands, shape dough into 1-inch balls and placed on prepared cookie sheet 2-inches apart; press to flatten slightly. **I don’t grease my hands. For whatever reason I just don’t like to… the mess isn’t that bad.** Bake brownies 7 to 8 minutes or until tops have cracked slightly. Transfer to wire rack to cool.

3 – In medium bowl, whisk confectioner’s sugar and milk until smooth. Whisk in butter and vanilla, then whisk in melted chocolate until smooth. **Cooling might be more crucial than I thought; my icing seized up quite a bit when I added the chocolate… Still tastes good though!** Swirl icing on top of cookie. Store in tightly sealed container, with wax paper between layers, at room temperature up to 3 days or in freezer up to 1 month.
